The Original Chipwich was created by Richard LaMotta and Sam Metzger in New York City in 1978. LaMotta, a former electronics security expert with a passion for food, and Metzger, a lawyer, launched their creation in 1981, selling them from street carts in New York City. The initial launch was a huge success, with the carts selling thousands of Chipwiches a day.

LaMotta's inspiration for the Chipwich came from his childhood love of dunking cookies in milk. He wanted to create a product that would evoke that same sense of comfort and nostalgia. The cookies used in the Chipwich are specially formulated to remain chewy even when frozen.

The business operates on a B2B model, selling its products to a wide range of clients, including supermarkets, convenience stores, and other retail outlets. The company makes money by selling the Chipwich at a wholesale price to these retailers, who then sell it to consumers.

In 2002, CoolBrands International acquired The Original Chipwich. However, CoolBrands faced financial difficulties, and the Chipwich brand was eventually acquired by Crave Better Foods, LLC. Crave Better Foods has since relaunched the product, making it available in stores across the eastern United States.
