Pan.Delirio is an artisanal bakery and pastry workshop founded in Madrid, Spain, in 2017 by Javier Cocheteux and his son, also named Javier Cocheteux. Pan.Delirio also distributes its products through high-end supermarkets like Sanchez Romero. To manage production and meet variable demand, the company utilizes an AI-powered tool to forecast sales.
A significant part of their operation includes a large workshop in Tetuán that serves as an R&D center and a baking school. The school offers courses for both amateurs and professionals, aiming to promote the culture of quality bread.
