DIAMOND BREWING
Craft beer and yeast science from Kumamoto.
DIAMOND BREWING Co., Ltd. is a craft beer company founded in Kumamoto, Japan, in 2016 by Yusaku Kito. Kito, who had a background in international trade, was inspired by the diverse craft beer cultures he encountered in over 30 countries and sought to bring that experience to his hometown of Kumamoto. The company began with the opening of the "KAEN" beer hall in 2012, later establishing a microbrewery in 2018.
The company operates on the principle that "beer is agriculture," utilizing Kumamoto's high-quality groundwater and local agricultural products to create its brews. This includes upcycling otherwise discarded parts of produce, such as gobo root tips, into its beer production. A significant part of its business model involves scientific research and development, positioning itself as a "Beertech" venture. DIAMOND BREWING collaborates with local universities, including Kumamoto University and Sojo University, to develop unique beers using locally sourced, original yeasts. This focus on science extends to creating a "yeast library" with a goal of cultivating dozens of proprietary Japanese yeast strains.
The business encompasses the manufacturing, wholesale, and retail of its craft beers, alongside operating several restaurants like the "Brewery KAEN." The company has developed over 80 types of beer and has started exporting to Taiwan, Singapore, and France. Looking ahead, DIAMOND BREWING plans to construct a new, larger factory incorporating IoT technology to significantly increase production capacity for canned beer and aims for a public stock listing.
