Southern Tier Brewing Company emerged in 2002 from the vision of founders Phineas DeMink, Sara DeMink, and Allen “Skip” Yahn. Leveraging Phineas and Sara's professional brewing experience from Chicago, they aimed to reintroduce small-batch brewing to Western New York, a region with a rich brewing history. They began operations in Lakewood, New York, with second-hand equipment, and by 2003, they celebrated their grand opening with an initial lineup of IPA, Pilsner, Mild, and Porter, distributing locally.

The product line includes year-round staples like the 2XIPA family, seasonal favorites such as the renowned Pumking Imperial Pumpkin Ale, and indulgent dessert stouts from the Blackwater Series. The company also produces hard ciders and operates the Southern Tier Distilling Company. A key product is the "Overpack'd" mixed 15-pack, which has become a top-selling craft variety pack in the nation, demonstrating the brand's broad appeal across different beer styles.
